Cocoa Orange Nakd* Style Balls
So these are my Cocoa-Orange Balls - same style as the Nakd* bars
I decided to give them a go, and the result was fantastic!!

Ingredients:
- 100g of cashew nuts
- 100g of dates (dried)
- 2 tbsp of sultanas/raisins
- 2tbsp of cocoa powder
- Zest of a large orange
Instructions:
- Pop all the ingredients into the food processor and combine
- Add a couple of drops of boiling water (or orange juice to make it more orange-y) to help the mixture come together.
- Heap all the mixture out and roll into little ball shapes - my mixture made 9, but you could make them bigger/smaller if you wish!
- Leave them to set a bit in the fridge for 15 mins, and voila! Absolute simple perfection!
Oaty, Nutty Granola

Most of the ingredients can be swapped and changed to include any nuts/seeds of your choice 😊 and Whey Protein can be added too up protein macros, just use less Almond flour. Let me know if you try it! X
- 100g almond flour
- 100g oats
- 50g flaked almonds
- 50g chopped hazelnuts
- 30g sunflower seeds
- 20g chia seeds
- 100g melted butter
- Honey (optional)
- A sprinkle of cinnamon or other mixed spices that you may like!
Instructions:
- Mix all dry ingredients in a bowl and add 100g of melted butter! If you like, add some honey for extra sweetness
- Spread out on a baking tray (I covered mine in tin foil first to prevent sticking) and bake for 15/20mins at 180*C checking every five mins.
- Leave to cool on the tray after before transferring to a Tupperware box or jar

Banana and Blueberry Muffins
Unfortunately, I cannot take the credit for these!!! Donal Skehan's recipe - Yum yum yum!

- 125g blueberries
- 2 mashed bananas
- 125g plain flour
- 75g wholemeal flour
- 200g rolled oats
- 75g brown sugar
- 250ml milk
- 2 large eggs (separated)
- 3tbsp sunflower oil
- 3tsp baking powder
- 1tsp cinnamon
- 1tsp salt
Instructions:
- Combine all dry ingredients
- Make a well in the centre and add in all the wet ingredients (except the egg whites)
- Mix to form a batter
- Separately, whisk the egg whites to form stiff peaks
- Fold in your egg whites and blueberries
- Fill the cupcake tin with cupcake liners and spoon the mixture in - should make about 12/14
- Pop into a pre-heated oven at 200*C for 25 minutes.
Chocolate Chip Banana Bread
This recipe is from my friend Carnie - some might know her as Healthy Dublin Gal over on Instagram - check her page out. She is such a motivation, after losing a whopping 8 stone weight!! She looks amazing, and her food and house pictures are to die for! Not only that, she is the nicest girl ever!!!

Ingredients
2 ripe mashed bananas
200g almond flour/ground almonds
1 tsp baking powder
1 tbsp honey
1 tbsp vanilla essence
4 eggs
2 tbsp cinnamon
chocolate chips (your own measure!)
walnuts to top

Instructions
- Easy peasy - bash it all into the blender/food processor.
- Pop it into a lined loaf tin.
- Then place into the oven (middle shelf) for about 40 mins at 200 degrees Celcius (some may vary)
- Allow to cool on a wire tray before removing the paper.
- Enjoy with a cuppa :)
Chewy, Chocolate Chip Cookies
I love these simple, buttery sweet cookies. They have no egg in them, so are perfect for people with allergies. I had to come up with an alternative for a child in my class, so this was perfect! The kids helped with the measuring and mixing. They love to get involved and help!

Ingredients:
- 225g butter
- 120g icing sugar
- 180g plain flour
- 1/2 teaspoon bicarb of soda
- 80g porridge oats
- 1 1/2 tsp vanilla essence
- 100 to 150g chocolate chips/raisins/white chocolate chips/dried cranberries (whatever else you like!)
Instructions:
- Cream the butter, vanilla essence and icing sugar into a creamy paste
- In a separate bowl, combine flour, bicarb of soda and porridge oats
- Add dry ingredients to wet and mix thoroughly.
- Add in chocolate chips (or whatever else you'd like!)
- If needed, add a couple of drops of water, if the mixture requires (It should be a dough-like mixture)
- Spoon mixture onto a lined baking tray
- Bake for 15 minutes, or until golden on top.
- Cookies will be soft when taken out of the oven, so don't touch!
- Leave to cool, on the baking tray, on a wire rack, for 10/15 minutes
